In America, there is a season that comes around once a year. Those with a sweet tooth can hardly wait for its arrival and are sad when it ends. Around late winter, we see young girls sitting outside of our local stores asking if we want to buy the delicious cookies as a part of their fundraiser. Reluctantly, we oblige and fill our cabinets with the variation of treats. Of course, eating them right from the box is always a good call, but getting creative with your cookies opens up a whole new experience for our palette. Check out some of these innovative recipes made with the Girl Scout Cookie enthusiast in mind.
Lemon Shortbread Cheesecake
Can’t choose a favorite? This recipe allows you to have two of the delicious cookies at once! This light and tangy cheesecake is sure to satisfy your taste buds. With a crust made of Trefoils (shortbreads) and the Lemonades in the filling, you won’t be able to tell which part of the treat you like best!
Thin Mint Cupcakes
One of the crowd favorites of the bunch includes the Thin Mint cookies. If this is your cookie of choice, you must try these cupcakes. Both filled and topped with the chocolatey cookie, your fill of Thin Mints will be satisfied for weeks to come. If you really want to embrace the chocolate-mint pairing, finish off the dessert with a peppermint ganache as the recipe calls for.
Coconut Baklava
Another flavor that are among the fan favorites is the coconut flavored Samoas. The blend of the coconut and caramel makes for a delicious melt-in-your-mouth treat. Baklava has taken on many forms in its day but this one seems out of this world. Including the infamous Samoas, walnuts, coconut flakes, honey and of course, phyllo dough.
Parfait
Its safe to say that parfaits are the underrated desserts of our time. The best thing about parfait is there truly is no structure to them. As long as you have a yogurt or ice cream base, add any toppings you want and you have a delicious parfait. That being said, add any number or types of cookies atop your base and you’ve got a delicious treat. For Samoas, add some extra caramel or fudge and for Do-Si-Dos, a bit of whipped cream can bring out the sweetness of the peanut butter.
